  • 2-3 green chilies, chopped
  • 1 tbsp ginger-garlic paste
  • 1 cup of plain yogurt
  • 2 tbsp biryani masala powder
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 2-3 bay leaves
  • 4-5 green cardamoms
  • 4-5 cloves
  • 1 cinnamon stick
  • 1 cup of fried onions
  • 2 tbsp of chopped coriander leaves
  • 1 tbsp of lemon juice
  • Salt, to taste
  • 4 tbsp of ghee or oil
  • 3 cups of water

Instructions:

Soak the rice in water for 1 hour before cooking.

This will help to keep the rice fluffy and prevent it from sticking together.

In a large pot, heat the ghee or oil over medium heat.

Add the sliced onions and fry until golden brown. Remove half of the onions and keep them aside for later.

Add the green chilies, ginger-garlic paste, biryani masala powder, turmeric powder, red chili powder, bay leaves, green cardamoms, cloves, and cinnamon stick to the pot.

Stir well and cook for 2-3 minutes until the spices are fragrant.Add the chicken or meat to the pot and stir well.

Cook for 5-6 minutes until the meat is browned on all sides.Add yogurt to it and stir it well.

Cook for 5-8 minutes until the yogurt is heated through.Add 2 cups of water to the pot and bring it to a boil.

Reduce the heat and let it boil for 15 minutes.

Drain the water from the rice and then add it to the pot. Mix well and let it cook for 10 minutes.

Add the fried onions, chopped coriander leaves, and lemon juice to the pot. Cover it with a tight-fitting lid and let it cook on low heat for 15-20 minutes.

Once the rice is cooked, turn off the heat and let it sit for 10 minutes before opening the lid. This will help the flavors to meld together.

Fluff the rice with a fork and garnish with the remaining fried onions and coriander leaves.

Your biryani is ready to serve! Enjoy it with raita, salad, and some pickles for a complete meal.
